Flare-up-Free and Scrub-Free broiler-roaster pan.

Here's THE REASONS WHY your broiler pan does NOT work.

Your broiler pan has an ill-conceived perforated sheet metal rack which allows only a small fraction of the fat that cooks out of the meat to slowly drip through. Most of the fat stays ON the rack to get HOT and smoke, splatter, flare-up, and bake-on into impossible to scrub-off black char.

Your "free" broiler pan is cheaply made of aluminum or porcelain steel which are "good" heat conductors which are "BAD." These pans get hot quickly and smoke and splatter any fat that comes into contact with the hot metal.

Here's THE REASON WHY Your Roaster Pan does NOT work.

Your roaster pan is made of "good" heat conducting aluminum, porcelain steel, copper coated steel, or stainless steel with an aluminum core or a copper bottom for "better" heat conduction. That's BAD because these metals get HOT quickly and when the fat that cooks out of the meat comes into contact with hot metal, the fat splatters, gets hot and smokes, oftes flares up or cathes fire, and the fat bakes-on into impossible to scrub off black char.

Here's WHY the WaterBroiler-WaterGrill-WaterRoaster Pan WORKS WONDERS.

The WaterBroiler Pan is properly designed with a "poor" heat conducting 18/8 Stainless Steel Wire Rack that is 87% AIR. This allows virtually ALL the fat drippings to instantly DROP through the wire rack into the pan. This prevents the fat from getting hot enough to smoke or splatter or catch fire or to bake-on. The drip pan is also made of expensive, "poor" heat conducting 18/8 Stainless Steel to keep the pan as cool as possible. 18/8 Stainless is often used for commercial stainless cookware because it is so easy to clean.

By the way, 18/8 Stainless Steel contains 18% chromium and 8% nickel in the iron alloy. Some stainless steel contain NO nickel and as little as 11% chromium which makes them cheap and inferior as cookware. The high nickel content of 18/8 stainless steel makes them rust-proof, more durable, and non-reactive, even to acidic foods.
Buyer Beware when buying "stainless steel." A magnet will NOT stick to expensive 18/8 Stainless Steel. A magnet sticks to cheap "stainless steel."

What does water have to do with it?

Pour one and one-half cups of Cold Tap Water into the "poor-heat-conducting" 18/8 Stainless Steel Pan before broiling and roasting to catch the fat drippings. The water prevents bake-ons in the pan itself which makes the pan very easy to clean (no bake-ons).

Fear not, the water will NOT steam in the "poor-heat-conducting" 18/8 Stainless Steel Pan in the time it takes to broil. And, in fact, it takes over 2 hours in a 350 degree oven for the water to reach the boiling point!

The water does evaporate slightly to provide a small amount of beneficial moisture to the oven to keep meats and poultry and fish juicy and succulent without basting. Meats brown beautifully.

Both the Pan AND Rack are made of professional, commercial quality 18/8 stainless steel. Together, the pan and rack weigh almost 2 ˝ pounds. The sturdy pan will never warp. The sturdy rack will never bend.

The 12 inch diameter round pan and 12 1/2 round rack are large enough to hold 6 large hamburgers or 12 lamb chops or an 11 pound turkey, or half-a-ham or even a whole ham if you have your butcher cut the shank end off so you can stand it up on the rack.

The pan is 1 1/4 inches deep to keep meat elevated above the water and drippings. It will hold a prime rib large enough for 8 servings! Or, any size roasting chicken.

The 12" pan allows oven heat to freely circulate for better, more uniform roasting. And, it allows room in the oven to cook other food.

The pan will fit IN your divided sink, IN your dish-rack, or IN your dishwasher for easy cleaning.

Two large welded-on 18/8 Stainless Steel handles on the pan makes for safe handling.

The removable stainless steel wire rack fits on TOP of the pan to keep food elevated for better roasting and to leave room in the pan for water and drippings.
